Carrot Cupcakes Everyone seems to love Carrot Cake, what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. I highly recommend consuming this water within a day for its health benefits. Just so you know: the mint can last up to 3 days in water. As for the pineapple, it will depend how ripe it is. In general, very ripe pineapple chunks will last less than the ones that are not that ripe.

Ingredients
- Water - 1 glass
- Cloves -2
- Cinnamon stick - 1/2 inch
- Ginger - 1/2 inch crushed
- Jaggery - 1small cube
- Pineapple- 7 to 9
- Orange - 9
- Lemon- 1
- Mint - Handful
Instructions
- Add water into it add cloves, cinnamon and Jaggery and boil well until you get good aroma.
- Off the flame and strain the spice water and bring it to cool temperature. Set aside.
- Take pineapples,Orange, Mint leaves into a mixer jar add lemon juice to it and blend well and strain the juice.
- Now to the pineapple juice, pour the cool downed spice water and mix well.
- Serve with Ice cube.
