 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s.  Lemongrass, also called citronella, is a tall, stalky plant. It has a fresh, lemony aroma and a citrus flavor. It’s a common ingredient in Thai cooking and bug repellent. Lemongrass essential oil is used in aromatherapy to freshen the air, reduce stress, and uplift the mood.

Lemongrass  is used as a detox  to kick-start your metabolism and help you lose weight. Even so, most research on lemongrass and weight loss is anecdotal, not scientific. Since lemongrass is a natural diuretic, if you drink enough of it, you're likely to drop some pounds.


Many people want to know how to use lemongrass. I like to buy big bunches of lemongrass at my local Asian supermarket and keep it in the freezer. I use the tender root pieces for curries, and save the tough end stalks for making this lemongrass detox.

Ingredients
  • Ice water/ Normal water - 1 glass
  • Lemongrass - 1 stalk
  • Cucumber - 1/2 
Instructions
  1. Wash the cucumber. Using a vegetable peeler peel the skin of cucumber, proceed to peel the cucumber into ribbon using the vegetable peeler. Put the ribbons into the jar.
  2. Using your hands, peel away the rough outer edge of lemongrass. Cut the lemongrass in half,lengthwise. Place the lemongrass onto a cutting board. Using rolling pin, gently smash the lemongrass.Add to the jar of normal water and cucumber ribbons.
  3. Fill with water. Give a stir. Let chill in the fridge at least an hour.
  4. Enjoy.

Peel cucumber like ribbons with the peeler.

Roll the lemongrass.

Cut lemongrass into half.

Put inside water.

Add in cucumber ribbons.

Stir well.

Shake well and drink!
