 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple.   How do I balance work and motherhood? I Don't!! ( Life of food blogger) The working mom gig is no joke. Now, I am not here to bubble up any arguments about who has it harder working mom's or  stay at home mom's. That is ridiculous argument with no right answer. All mom's and family have their own challenges, and to whittle down a mom essence to whether she works in or out of the home is rather insulting.  I can only speak about my experience which is as a full-time stay at home working mom, what this means is that a lot of household chores have taken a back seat. Dishes sit by the sink often for days if they can't go in the dishwasher, which is more common for any food blogger as they have to cook and take pictures often and goes for food photo editing either in phone or by system.  How's the feel to give birth during pandemic time!! Filled with terror, anxiety and excitement. I waddled into the kitchen to the living room that counted down the days until my due date. That morning, on October 11th, i was less than a week from my due date . I and Dinesh was talking about my elder daughter birth story how she was born and for this pregnancy I was eating more of biriyani's during my last trimester, since there was no lockdown any more.  Yes!!! Am now 2nd time c-sec Mom !!!   A caesarean section is a lifelong disability from the birth of a child until the death of a mother. Many people often passes remarks like "oh, caesars pain is nothing but only cuts the stomach"!!. But let me tell you that the baby has to be brought into the world by cutting the 7 curtains of our body. Yes, may be the feeling of cutting the abdomen is not understood because of anesthesia before a caesarean section but within half and hour 3 hours of saline are over. T his spinal injection injected into the spine through a thick syringe causes pain. The next 24 hours brings immense pain, that kind of pain where a feel somebody has chopped one of your body part but had not applied medicine but yes, its endurable after surviving that pain for 48 hours.
