Carrot Cupcakes Everyone seems to love Carrot Cake, what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Being from Karnataka, I want ” Cook with Smile ” to be a one-stop destination for most of the Karnataka cuisine. So today I’ll share a recipe of one more authentic Karnataka Dish ”Bassaru“.
Bassaru means ” Basida + Saaru – Strained Water + Rasam “. Basically, it is a type of rasam where in toor dal and greens/veggies are cooked together and strained to get a very flavorful broth ,which is later boiled with freshly roasted ground spices.
The separated dal and greens/veggie mix is used to make a stir fry. Spicy Bassaru, palya, little ghee, Ragi Mudde / Rice is one awesome combination…. a healthy meal in itself !!!

Ingredients
- Drumstick leaves - 1 cup
- Toor dal - 1 cup
- Onion - 2
- Tomato - 1
- Garlic - 2
- Coconut 4 to 5 pieces
- Tamarin juice -1/2 cup
- Mustard -1 tsp
- Chana dal - 1/2 tsp
- Urad dal - 1/2 tsp
- Fenugreek - 1/4 tsp
- Pepper - 1 tsp
- Cumin - 1 tsp
- Coriander leaves - bunchfull
- Curry leaves - 5
- Chilli powder - 2 tsp
- Turmeric powder - 1/4tsp
- Salt - as per taste
- Water - as required
- Oil - 2 tsp
Instructions
- In a pressure cooker add 1 cup of toor dal, turmeric powder, Cumin, fenugreek seeds with pinch of turmeric, drumstick leaves and little oil and cook for 4 whistle.
- Dry roast garlic and onion on direct low flame and peel the skins.
- In a mixer jar add pepper, cumin, fenugreek seeds, roasted garlic and onion, fresh onion, garlic pods, coconut, coriander leaves ,curry leaves, cooked drumstick dal, chilli powder and required salt, grind into fine paste.
- Now add tomato to grinded paste and grind again.
- In a pan add oil, once heated then add mustard, chana dal, urad dal, curry leaves and add sliced onions and saute them well.
- Now add the grinded paste and saute well for 10min until the raw smell goes from it.
- Now add tamarin juice and mix.
- Add required water and bring to boil and turn off the flame.
- Serve hot with ragi balls or with hot rice with ghee on it.
