NARGISI KOFTA | INDIAN SCOTCH EGG
Nargisi kofta – What could be more delicious and flavorsome than humble hard boiled eggs? These koftas featuring eggs encased in spiced minced meat, deep fry.
With winter in full swing here, this is the time of the year when the one and only thing on my mind is more and more deep fried delicacies. I want to dedicate this whole season to rich, comforting soups and deep fried food. And I think comfort foods like this nargisi kofta is a must to bring in warmth to the cold days.
This Indian version of scotch eggs loaded with spices is totally awesome.
Traditionally, this appetizer is made with minced or ground lamb. However, as customization is the key to creating the most delicious recipes, feel free to choose any kind of minced meat you like.( I used chicken minced here). Even mashed potato makes an excellent choice for your vegetarian friends.
The minced meat is subtly flavored with ginger garlic paste, ground pepper, garam masala and coriander (cilantro) leaves. Adding red chili powder adds the spice kick. A couple of tablespoons of breadcrumbs helps to bring the whole mixture together. Don’t have breadcrumbs on hand? Sub with all-purpose flour or rice flour. Simple as that!
Apart from minced meat, eggs are an important element in this recipe. In fact, the word “nargisi” comes from Narcissus, a flower with a yellow center and white petals resembling the color theme of hard boiled egg. In this recipe, eggs are encased in spiced meat mixture and deep fried to make the koftas.

- Minced chicken - 250 grams
- Egg - 3
- Onion - 3 tblspn finely chopped
- Green Chillies - 2 to 3 finely chopped
- Coriander leaves - 3 tblspn finely chopped
- Garam Masala Powder - 1/2 tsp
- Cumin Powder - 1/2 tsp
- Pepper powder- 1/2 tsp
- Turmeric powder - 1/2 tsp
- Pink Salt to taste
- Ginger Garlic Paste - ½ tsp
- Breadcrumbs - 2 tblspn
- Lemon juice - 1/2 tsp
- All Purpose Flour / Maida - ½ cup
- Oil for deep frying
- Take eggs in a bowl, cover it with water. Bring it to boil, simmer it for 4 mins. Turn off the heat and let it stay for 5 mins. Drain and run cold water over it. Peel off the shell and set aside.
- Take chicken mince, onion, chilli, coriander leaves, salt, garam masala powder, cumin powder,pepper powder, ginger garlic paste, lemon juice, turmeric powder, 2 tblspn of breadcrumbs and mix well.
- Spread plastic wrap on the counter, take small portion of the meat and flatten it lightly. Place a egg over it, wrap the chicken mince over the eggs with a help of plastic wrap. Seal it well.
- Now you can chill this for 15 mins.
- Take flour in a bowl and add little water to make a paste. Take breadcrumbs in another bowl.
- Take the egg and dip it in the flour mix. Roll it in breadcrumbs.
- Chill this for 15 mins before frying.
- Deep fry it in oil till golden.
- Drain and serve.

Mix all well. And keep it on fridge for 15mins. |

Take 2 tsp of maida flour and add water to make a thick paste. |

Take boiled and peeled eggs. |

Take plastic wrap. |
|
Flat the minced into it. |
|
Keep the boiled egg on it. |
|
Cover it to get the shape. |
|
Coat the eggs well with minced chicken. |
|
Dip it into maida mixture. |
|
Coat with breadcrumbs. |
|
Set this in fridge for 15min before frying. |
|
Add oil and start to fry. |
|
Fry until golden brown in medium flame. |
|
Serve either hot or cold.
