 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. let's talk about clay cooking!!!! The more we "advance" in life, the more we realise  the value of our ancient traditions. Much before the advent of plastic and melamine, was clay and ceramic crockery. If you can recall, your grandma used to store water in an earthen pot for a reason--the minerals in the clay get mixed in the water, while keeping it cool even in the harshest of summers. The earthen pots that have kept water cool in the summer since time immemorial. Those who drink water stored in earthen pots will know how immensely satisfying it is, so imagine drinking such water from a portable clay bottle.
