Carrot Cupcakes

 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Chilli Garlic Rice 



Chilli Garlic Fried Rice is a fantastic  rice recipe- a vibrant and healthy rice dish with the goodness of garlic. Popular Indian street food, this Chilli garlic rice is extremely appealing with spicy chilli flakes and dominant garlic flavours. You may add scrambled egg or stir-fried chicken pieces or prawn to serve it as main dish or for a healthy school or office  lunch pack.

 This can be cooked as quick as can with simple ingredients.
 You can prepare the rice beforehand to get rid of the stickiness. For perfect rice, make sure the rice is cold enough before mixing in the garlic.

                                 

Garlic has many health and medicinal properties. The Sulphur compounds found in Garlic is proved to be beneficial to overall health and it is rich in Vitamin C, manganese and vitamin B6. So, Chilli Garlic rice makes a great lunch option for kids; as it contains enough Carbohydrates and Garlic to help them retain their energy and immunity.

You can add vegetables too.
Since there is an hike in onion price this dish is perfect to cook without adding onions.

Ingredients
  • Jeera samba Rice - 1 cup
  • Gingerly oil - 3 tblsp
  • Garlic Finely chopped - 1 cup 
  • Mustard -1 tsp
  • Channa dal/ kalla parupu- 1 tsp
  • urad dal -1 tsp
  • Curry leaves - 1 string
  • Hing - 1/2 tsp
  • Turmeric powder - 1/2 spoon 
  • Red Chilli Powder - 1 tsp
  • Garam Masala- 1/2 tsp
  • Salt to taste.
Instructions
  1. Add 1 cup of  washed rice in pressure cooker, pour 2cups of water and cook for 2 sounds. Cool the rice and keep aside.
  2. Heat Gingerly oil in pan.
  3. Add mustard seeds, chana dal, urad dal. now add 1 string of curry leaves, hing powder .
  4. Add in chopped garlic and saute well until it turns brown.
  5. Add in turmeric powder, chilli powder, garam masala and saute well.
  6. Add in salt and mix well.
  7. Add in cooked rice and mix well.
  8. Fluff up the rice with 1 stp of ghee and serve.

Pictorial:

Add urad dal.

Add chana dal.

Add in curry leaves.

Add in finely copped garlic.

Mix all well.

Add in hing powder.

Add in chilli powder.

Add in garam masala.

Saute well until garlic roast well.

Now add cooked rice.

Mix the rice well.

Add ghee for more flavour .

Serve HOT!!!
