Chilli Garlic Rice
Chilli Garlic Fried Rice is a fantastic rice recipe- a vibrant and healthy rice dish with the goodness of garlic. Popular Indian street food, this Chilli garlic rice is extremely appealing with spicy chilli flakes and dominant garlic flavours. You may add scrambled egg or stir-fried chicken pieces or prawn to serve it as main dish or for a healthy school or office lunch pack.
This can be cooked as quick as can with simple ingredients.
You can prepare the rice beforehand to get rid of the stickiness. For perfect rice, make sure the rice is cold enough before mixing in the garlic.

Ingredients
- Jeera samba Rice - 1 cup
- Gingerly oil - 3 tblsp
- Garlic Finely chopped - 1 cup
- Mustard -1 tsp
- Channa dal/ kalla parupu- 1 tsp
- urad dal -1 tsp
- Curry leaves - 1 string
- Hing - 1/2 tsp
- Turmeric powder - 1/2 spoon
- Red Chilli Powder - 1 tsp
- Garam Masala- 1/2 tsp
- Salt to taste.
Instructions
- Add 1 cup of washed rice in pressure cooker, pour 2cups of water and cook for 2 sounds. Cool the rice and keep aside.
- Heat Gingerly oil in pan.
- Add mustard seeds, chana dal, urad dal. now add 1 string of curry leaves, hing powder .
- Add in chopped garlic and saute well until it turns brown.
- Add in turmeric powder, chilli powder, garam masala and saute well.
- Add in salt and mix well.
- Add in cooked rice and mix well.
- Fluff up the rice with 1 stp of ghee and serve.
