 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. While many look at it as ‘Paan’ consumed after a good meal or just as a habit, it also has a significant place during religious rituals in India.

In India, sheaf of betel leaves are offered to Gods, elders in the family as a mark of respect during festivals and functions. However, these glossy, heart-shaped leaves are often ignored for the huge amount of health benefits they offer to the mankind.

Known as  Vethalai in Tamil, , these leaves are not as bad as you imagined. Betel leaves come with several curative health benefits as they are loaded with vitamins like Vitamin C, thiamine, niacin, riboflavin, carotene and a great source of calcium.
                                                  
                                                                         


The Benefits of Betel Leaf:

Analgesic: Betel leaf is an excellent analgesic that offers instant relief from pain. It can be used in alleviating pain caused due to cuts, bruises, rashes. Make a paste with tender betel leaves and apply on the affected area. Betel leaf juice provides relief from internal pains in the body.

Eases Constipation: Betel leaves are a powerhouse of antioxidants which clear radicals from the body. It restores normal PH levels in the body and helps upset stomach. Ayurveda widely recommends eating betel leaves for relief from constipation. Crush betel leaves and put it in the water overnight. Drink the water in the morning on an empty stomach to ease bowel movements.

Improves Digestion: Ever wondered why chew on betel leaf after a good meal? It is recommended because of its carminative, intestinal, anti-flatulent and for those properties that help in protecting the gut. Betel leaves increase metabolism triggering circulation and stimulating the intestines to absorb vital vitamins and nutrients.

Reduces respiratory issues: Betel leaf widely helps in treating issues related to cough and cold. It is an excellent cure for those suffering from chest, lung congestion and asthma. Apply some mustard oil on the leaf, warm it and place it on the chest to cure congestion. You can also boil few leaves in water, add cardamom, cloves and cinnamon in two cups of water. Reduce it to 1 cup and consume this concoction two to three times a day for an excellent relief from congestion and breathing issues.

Antiseptic and anti-fungal properties: Betel leaves have amazing antiseptic properties as they are rich in polyphenols especially chavicol offering dual protection from germs. It is also used extensively in treating arthritis and orchitis.

It’s amazing anti-fungal properties provide instant relief from fungal infections. Applying the paste of betel leaves kills fungal infection in the affected region.

I got this recipe from my mother-in-law, since me and my daughter often catches cold and dry cough during winter season. 
Am not telling it by name as "miracle" drink,because this drink cures within 1 or 2 days.

Ingredients
  • Betel leaf- 1 
  • Jeera - 1/2 tsp
  • Pepper - 1/2 tsp
  • Karupatti or honey - 2 tsp
  • Water - 2 glass  
Instructions
  1. Add water in bowl and add betel leaf, jeera, pepper and karupatti.
  2. Boil this water for 15 mins.
  3. Strain the water. 
  4. Add honey if you need for more sweetness and Serve hot!!
Pictorial:
Take 2 glass of water.

Brink it to boil.

Add in washed betel leaf.

Add in jeera 1/2 tsp.

Add in 1/2 tsp pepper cons.

Boil for few minutes.

Add karupatti.

Boil for few mins.

Strain the water.

Drink hot. you can use honey for extra sweetness.

Drink while it is hot.
