I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Ingredients
- Jeera samba Rice - 1 cup
- Ghee - 3 tblsp
- Fennel Seeds / Sombu / Saunf - 1 tsp
- Cinnamon / Pattai - 1 stick
- Cardamom / Yelakai - 1
- Cloves / Krambu -3
- Star arsin- 1
- Bay leave -1
- Garlic- 6 pods
- Onion - 1 medium size chopped finely
- Green Chillies - 4
- Salt to taste
- Water - 2 cups
Instructions
- Soak rice for 30 mins. Set aside.
- Heat ghee in a pot. Add in whole spices and let them sizzle.
- Add in onions and cook till golden.
- Add in chillies, garlic and mix well.
- Add in rice and salt and mix well.
- Add in water and bring it to a boil. Cover and cook for 2 sounds.
- Fluff up the rice and serve.
