I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Athimathuram or scientifically called as Glycyrrhiza glabra or Glyceria Glabra is a cultivated Liquorice plant hailed for its medicinal properties. It is commonly called as sweetwood.  In Tamil Nadu, we call it as 'Athimathuram' or 'Athimadhuram'. Common usage of Athimadhuram is treating cough and cold.



From the root of licorice , a sweet, aromatic flavouring can be extracted. It is native to Western Asia and southern Europe. Liquorice extracts have been used in herbalism and traditional medicine. It is used for the treatment of many health problems.

Ingredients:
  1. Athimadhuram powder- 1 tsp
  2. Dry ginger powder - 1/2 tsp
  3. Palm sugar - 1 tsp
  4. Salt - pinch 
  5. Lemon juice - 1 tsp (optional)
  6. Water - 3 glass
METHOD :
  1. Add 3 glass of water in a pot and bring it to boil.
  2. Add athimadhuram powder,dry ginger powder, palm sugar and pinch of salt and boil them for 5 min.
  3. Strain the kashayam and add lemon juice if needed.
  4. Serve warm. Enjoy
