I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. This delicious monsoon soothing soup is an easy, healthy and a quick way of getting into a whole feast of lucious greens and they will love it. often, i drizzzle a bit of coconut milk on top to make the treat extra- tasty.
This Blended Super Greens Soup is quite filling as well. Also, a sprinkle of pepper powder enhances the flavor.
I cooking lesson learnt long time ago and also a tip to most of you, its easier to make a creamy soup even without cream peeping into it.

Ingredients
- Spinach - 1 bunch
- Moong dal - 1/2 cup
- Onion medium size - 1
- Tomato - 2
- Green chilli -2
- Garlic - 6-7
- Turmeric powder - 1/2 spoon
- Cumin seeds - 1 tsp
- Salt - as per taste
- Oil - 1 tsp
- Coconut milk - 1/2 cup (optional)
- Water - 1cups
Instructions
- Wash the spinach well and drain the water.
- In a pan add 1 tsp of oil and add cumin seeds.
- Add in onions and sauté well, than add tomato's and mix.
- Add in green chillies, garlic pods and mix.
- Now add washed moong dal mix well, now add spinach, with 1/2 tsp of turmeric powder and salt as per taste.
- Add 1cup of water and cover the lid and cook for 3 whistle, once the steam is out, let it come to room temperature, put this mixture into blender and grind into smooth paste.
- Transfer this soup into bowl and add 1/2 cup of coconut milk with little pepper.
- Boil for 1 min and off the flame.
- Serve hot.
