Mappilli samba Rice Payasam (Bridegroom Rice)
Mappillai samba rice is a good source of iron and zinc. Iron contributes to the production of myoglobin and hemoglobin. Myoglobin and hemoglobin deliver oxygen to muscles and tissues keeping body high in energy level. It also contains pro-anthocyanins which help to reduce cholesterol and hyper glycemia
Mappillai samba rice is very healthy rice. At least we have to take this rice weekly twice or monthly twice . All age person can take this rice Because its very healthy . Mappillai Samba rice having thick skin layer so, soaking take more than normal rice we have to soak Mappillai Samba rice more than the normal rice.
People often do either dosa or kanji, so i thought of trying it like payasam, since i love any dish with jaggery and coconut milk.

- Soaked overnight mappilai samba rice - 1/2 cup
- Jaggery - 1/2 cup
- Coconut milk - 1 cup
- Ghee - 2 tsp
- Dry grapes - 1 tsp
- Cashews - 1 tsp
- Water - 1/2 cup
- Salt - Pinch
- Soak the mappilai samba rice over night and next day drain the water and add soaked rice into mixer, grind Corse.
- Now add this grinded rice into a pan with 1/2 cup of water and a pinch of salt and mix well and cook for 10 mins.
- In other pan add water and add crushed jaggery and boil until it is dissolve. And strain the jaggery juice
- Once the rice is cooked, Add jaggery juice and mix well and cook for 2 min. Off the flame.
- Once the flame is off, add coconut milk and mix well, dont boil the payasam after adding coconut milk, this will make the milk to split.
- Add ghee in other pan and add dry grapes and cashews fry until brown and add into the payasam.
- Serve hot !!
