 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Mappillai samba rice is a good source of iron and zinc. Iron contributes to the production of myoglobin and hemoglobin. Myoglobin and hemoglobin deliver oxygen to muscles and tissues keeping body high in energy level. It also contains pro-anthocyanins which help to reduce cholesterol and hyper glycemia



 Mappillai samba rice is very healthy rice. At least we have to take this rice weekly twice or monthly twice . All age person can take this rice Because its very healthy . Mappillai Samba rice having thick skin layer so, soaking take more than normal rice we have to soak Mappillai Samba rice more than the normal rice.

People often do either dosa or kanji, so i thought of trying it like payasam, since i love any dish with jaggery and coconut milk.

Ingredients
  • Soaked overnight mappilai samba rice - 1/2 cup
  • Jaggery - 1/2 cup
  • Coconut milk - 1 cup
  • Ghee - 2 tsp
  • Dry grapes - 1 tsp
  • Cashews - 1 tsp
  • Water - 1/2 cup
  • Salt - Pinch 
Instructions
  1. Soak the mappilai samba rice over night and next day drain the water and add soaked rice into mixer, grind Corse.
  2. Now add this grinded rice into a pan with 1/2 cup of water and a pinch of salt and mix well and cook for 10 mins.
  3. In other pan add water and add crushed jaggery and boil until it is dissolve. And strain the jaggery juice  
  4. Once the rice is cooked, Add jaggery juice and mix well and cook for 2 min. Off the flame. 
  5. Once the flame is off, add coconut milk and mix well, dont boil the payasam after adding coconut milk, this will make the milk to split.
  6. Add ghee in other pan and add dry grapes and cashews fry until brown and add into the payasam.
  7. Serve hot !!

Soak rice overnight, strain the water

Add the rice into mixer 

Grind corse 

Add the corse rice into a pan 

Add 1/2 cup of water and mix well

Add pinch of salt 

Cook the rice for 2 min 

Mean while in other pan add water with crushed jaggery 

Boil until it jaggery got dissolve 

Add Strain the jaggery juice into cooked rice  and mix well



Let it boil for few min, off the flame 

Add coconut milk and mix 

Add Roasted grapes and cashews with ghee and add into payasam 

Serve hot !!!
