Granola Bars - Oven Based
Granola is a breakfast food and snack food consisting of rolled oats, nuts, honey or other sweeteners such as brown sugar, and sometimes puffed rice, that is usually baked until it is crisp, toasted and golden brown. During the baking process, the mixture is stirred to maintain a loose breakfast cereal consistency. Dried fruit, such as raisins and dates, and confections such as chocolate are sometimes added. Granola is often eaten in combination with yogurt, honey, fresh fruit (such as bananas, strawberries or blueberries), milk or other forms of cereal. It also serves as a topping for various pastries, desserts or ice cream.
Granola is carried by people who are hiking, camping, or backpacking because it is nutritious, lightweight, high in calories, and easy to store (properties that make it similar to trail mix and muesli). As a snack, it is often combined with honey or corn syrup and condensed into a granola bar form that makes it easy to carry for packed lunches, hiking, or other outdoor activities.
This granola bars can be used on top of your smoothies,kanji, Protein shakes or even on cooked oats, with any seasonal fruits.
TIPS ON HOW TO MAKE GREAT GRANOLA AT HOME:
- Use old fashioned oats, not quick oats.
- Use a liquid fat like vegetable oil, ghee or melted coconut oil.
- Use raw nuts, like pecans, walnuts, pistachios, almonds, hazelnuts.
- If you want to make nut-free granola use seeds like sesame, sunflower, pumpkin, chia, etc instead of nuts.
- Always add dried fruit after the granola is cooked, if not they will get tough and possibly burn.
- Store in an airtight container, we love to use glass jars.
- Granola freezes really well, it can be kept in the fridge or on the counter if planning to finish it within a week or less.

- Old fashion rolled oats - 2 cups
- Grated coconut - 1/2 cup
- Chopped cashew nuts - 1/2 cup
- Fried Groundnuts - 1/2 cup
- Dried black grapes - 1/4 cup
- Dried cranberry - 1/2 cup
- Flax seed- 1tsp
- Cinnamon powder - 1/2 tsp
- Chopped dark chocolate - 1/2 cup
- Palm sugar - 1/2 cup
- Coconut oil - 1/4 cup
- Vanilla extract - 1 tsp
- Pink salt - pinch
- Take a large bowl and add grated coconut with cinnamon powder.
- Add old fashioned rolled oats, fried peanut, chopped cashew, dried cranberry, flax seed, chopped dark chocolate, palm sugar, vanilla extract and coconut oil to it with pinch of salt and mix all together well.
- Take a oven based pizza plate or cookie plate, spread this mixture on the plate and press it evenly.
- Keep this in oven and heat the oven for 200 degree for 10min (note that each oven temperature varies, keep checking for any burned smell).
- Once baked, add dried black grapes and cut it into required sized pieces.
- Store in air tight container once it comes to room temperature, this will stay for 2 weeks or more than 1 month when kept outside or even in fridge.
- Use this oats when you make regular smoothie, kanji or any protein shakes top with spicy granola oats and add any fruits along with it.
