I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Vetti Veru Sarbath | Camel Grass
Vettiver (Camel Grass), is a tropical, clumping-type grass grown for many uses. I purchased this plant few days ago to purify the water during summer season. Later i thought of making into sarbath. It has quite an amazing story.
Vettiver is a member of the same part of the grass family as maize, sorghum, sugar cane and lemongrass. It is an ancient plant that has been grown around the world for centuries, with great benefit .
A native of India, Vetiver has had a long history. The name comes from “vettiver,” a Tamil word meaning “root that is dug up.”
Vettiver can be found in any country medicine stores (Naatu marundhu kadai). It’s a herb mentioned in Ayurvedic Texts as one of the cooling herbs, and as a great blood purifier.
Its earthy woody aroma & coolant property makes Vettiver Sarbath a great drink & very refreshing to have at any part of the day.
When you boil this roots, we get good aromatic which fills the entire home during this early morning rainy days.

1) I like to use Palm jaggery powder. You can use regular refined sugar also to make the syrup. 2) If needed, sparingly add corn starch for the sarbath to be thick, just like store bought.
NOTE: since we have soaked the roots and boiled well it will give you too much of bitter taste, so I recommend to dilute this sarbath and drink.

- Khas Khas Bena in Hindi;
- Useera in Sanskrit

Different Usage Of Khas Vettiveru In Daily Life:
- Baskets are made with the roots
- Mats, curtains and hand fans are widely made
- The roots are used in making cool drinks, skin cosmetic products and soaps.
- These roots contain fragrant oils, calcium, different minerals, Vatti venal, Vatti veral,
- In summer, curtains made with these roots are hanged to doors and windows and made wet frequently to avoid heat.
- Presently, in air coolers the powder of these roots is added to get a good fragrance.
- One to two teaspoons of powder of these roots in a small bucket of water kept in a room gives good aromatic smell.
- Smash a bunch of these roots put it into a bucket of water for a while and taking bath with this water will be pleasant for the body. This may be continued in summer to avoid prickly heat and body heat.

Ingredients
- Water - 1L
- Vetti veru - 1/2 bunch
- Palm jaggery powder - 1 cup
- Lemon juice - 2 tsp
- Brown sugar - 2 tsp
Instructions
- Wash the veru once and soak soak in 1 litre of water previous night.
- Next day boil this soaked water along with same quantity of water with veru for 1 hour, until the water gets reduced to half litre.
- Now remove the veru from boiling water.
- Add 1 cup of palm jaggery powder to it and mix well and boil for 1 min and off the flame.
- Now Take only half glass of this sarbath and add brown sugar with lemon juice and mix with 1 glass of water.
- NOTE: since we have soaked the roots and boiled well it will give you too much of bitter taste, so I recommend to dilute this sarbath and drink.
- Serve either warm or chill
- Enjoy.
NOTE: dont discard this boiled veru, u can dry it and make popwder and can use it as face or body scrub.

Add Lemon juice |
Add water and dilute it well |
Serve warm or chill |
Store this sarbath in glasss bottle and can be stored for 1 month in fridge |
Dont discard the boiled veru, you can dry it and make into powder.
