Carrot Cupcakes

 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. There are many theories on the origin of this cake, some say it descended from the English's baked carrot puddings or European steamed carrot puddings. Khapli Wheat Parata 



Khapli Wheat is ground using traditional stone flour mill, wherein flour retains all the nutrients of the grain.

Khapli Atta/ Emmer Flour was very much used by our ancestors for its low on gluten properties. If you are not tolerant to gluten yet want to enjoy the rotis, switch to Khapli Atta (known as farro/ Emmer in English) .

Unlike normal wheat, Khapli Wheat is long grain and its flour is reddish in colour. Khapli 


 It has more fibre, protein and other natural nutrients. Its perfect for those with pcos, diabetes and thyroid.


This parata filled with all grains which has to be soaked for min 8 hours, if you have planned for dinner you can soak all dals in the morning and cook in the night time.

Ingredients
  • Khapli wheat - 1 cup
  • Green Moong dal - 1 tsp
  • Horse gram - 1 tsp
  • Chana dal - 1 tsp
  • Urad dal - 1 tsp
  • Yellow moong dal - 1 stp
  • Fox tail millet - 1 tsp
  • Cumin - 1 tsp
  • Fennel seed - 1 tsp
  • Ajwain - 1 tsp
  • Flax seeds - tsp
  • Chilli powder - 1tsp
  • Turmeric powder - 1/2 tsp
  • Salt as per taste
  • Water - 1/2 cup
  • Oil - 1 tsp
Instructions
  1. Add Green moong dal, yellow moong dal, horse gram, chana dal, urad dal, fox tail millet each 1 tsp and wash well and soak this well for min 8 hrs.
  2. Now drain the water and add this in mixer with Cumin , fennel seeds, flax seed, ajwain , chilli powder, turmeric powder and salt, grind this into smooth paste. keep aside
  3. Add 1 cup of khapli wheat in a bowl then add this paste and mix well, add water while mixing dough if required. Add 1 tsp of oil on the dough and rest for 5 min.
  4. Roll the small size dough and roll it flat and add into hot tawa and cook like chapati with oil on each side.
  5. Serve hot with either thick curd or tomato chutney.

Wash well and soak this for 8 hrs 

Add into mixer

Add salt

Add fennel seeds

Add cumin seeds

Add ajwain

Add flax seed

Chilli powder

Turmeric 

Grind into fine paste

Add Khapli wheat 

Add the paste

Mix well first then add water and make into dough 


Add oil and soak for 5 min

Take a small ball n dust into powder 

Roll out thin 

Add on hot tawa 

Add oil on both sides and cook 

Serve hot !!!!
