I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Ingredients
- Ginger - 4 inch
- Boiled and peeled tomato - 3
- Green chilli -2
- Garlic - 5
- Turmeric powder - 1/2 spoon
- Cuim seeds - 1 tsp
- Oil - 1 tsp
- Salt to taste
- Water - 2 cups
Instructions
- Take 3 tomatoes and add in hot water and boil for 1 min and remove from the water and remove the skin and keep aside.
- In a mixer jar add ginger, garlic and green chilli and peeled tomato and grind smooth paste.
- In a pan add 1 tsp of oil and add cumin seeds.
- Once cumin crack add ginger-tomato puree and saute well.
- Add turmeric powder and pink salt as per taste and mix well, add 2 cups of water and cover and cook for 2 mins.
- Serve hot.
