 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Spicy Granola Bars (Stovetop -NO bake)- FOR EASY WEIGHT LOSS
Making granola is easy, one bowl, one baking sheet, most of the granola recipes are either done by baking or by cooking sweet bar,but since my hubby is highly spice lover so though of adding few simple ingredients. The best part is that you can customize it any way you like. In this case, we though out of the box and made our granola savory by adding salt and spices. 
You can carry this bars for mid snacks or even for late lunch munching. 
This granola bars can be used on top of your smoothies,kanji, Protein shakes or even on cooked oats, with any seasonal fruits.

 BASIC INGREDIENTS TO MAKE GRANOLA AT HOME:

  • Oats
  • Nuts or seeds
  • Dried fruit

TIPS ON HOW TO MAKE GREAT GRANOLA AT HOME:

  • Use old fashioned oats, not quick oats.
  • Use a liquid fat like vegetable oil, ghee or melted coconut oil.
  • Use raw nuts, like pecans, walnuts, pistachios, almonds, hazelnuts.
  • If you want to make nut-free granola use seeds like sesame, sunflower, pumpkin, chia, etc instead of nuts.
  • Always add dried fruit after the granola is cooked, if not they will get tough and possibly burn.
  • Store in an airtight container, we love to use glass jars.
  • Granola freezes really well, it can be kept in the fridge or on the counter if planning to finish it within a week or less.
  • I have used homemade Kollu podi or horse gram powder as one of the spice powder, check out the recipe if you have planned of adding into this oats.

Ingredients
  • Old fashion rolled oats - 2 cups
  • Dry red chilli - 3 to 4
  • Curry leaves - 1 string
  • Chopped cashew nuts - 1/2 cup
  • Chopped almonds - 1/2 cup
  • Besan gram - 1/2 cup
  • Groundnuts - 1/2 cup
  • Dried green grapes - 1/2 cup
  • Dried black grapes - 1/4 cup
  •  Chilli powder - 1 tsp
  • Pepper powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Horse gram/kollu podi  - 1/2 tsp
  • Amchur powder - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Pink salt - as per required
  • Ghee - 3  tsp
Instructions
  1. Take cast iron or normal pan, add 2 tsp of ghee and add 2 cups of old fashioned rolled oats and roast for 5 mins and keep aside.
  2. In the same pan add 1 tsp of ghee,add dried red chilli, 1string of curry leaves and fry.
  3. Now add chopped cashews,almonds,besan gram,groundnut,dried green grapes and mix will.
  4. Now add chilli powder,pepper powder,cumin powder, horsegram powder, amchur powder,turmeric and salt as per tastes and mix all well.
  5. Now add roasted oats into spice and nuts mix and mix well and off the flame and add black grapes.
  6. Store in air tight container once it comes to room temperature, this will stay for 2 weeks or more than 1 month when kept outside or even in fride.
  7. Use this oats when you make regular smoothie, kanji or any protein shakes top with spicy granola oats and add any fruits along with it.

Take all ingredients 


Add 2 tsp of ghee

Add Rolled oats

Roast for 5mins

Transfer to a bowl 

In the same pan add 1 tsp of ghee

Dried red chilli

1 string of curry leaves

Chopped cashews 

Chopped almonds 

Add besan gram, groundnuts

Dried green grapes 

Chilli powder

Pepper powder

Cumin powder

Horsegram powder

Amchur powder

Salt as per taste and mix all well

Now add roasted rolled oats and mix with the spice powders and off the flame

Add black grapes only after offing the flame and mix well
Store in air tight jars when it comes to room temperature 

Add this homemade spicy Granola bars on any smoothie,here i used on top of the cooked oats with seasonal fruits.
