I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Ingredients:
  1. Old fashion rolled oats / instant oats
  2. Dates 5 - 6 (deseed)
  3. Frozen banana - 1 
  4. Amla - 1 
  5. Cinnamon powder - pinch
  6. Flax seed - 1 tsp
  7. Vanilla extract - 1 tsp 
  8. Water - 1/2 cup
METHOD :
  1. Soak the old fashion rolled oats or instant oats with deseed dates in half cup of water for 2 hours .
  2. Now in a blender add soaked oats with frozen banana, amla,pinch of  cinnamon powder , 1 tsp of flax seed and vanilla extract into smooth texture.
  3. Pour the smoothie in serving cup and garnish with Crushed cashews.
  4. Enjoy!
