Thinai Pongal is foxtail millet pongal which is healthy, delicious and savory. It is specially prepared during the harvest festival of Pongal but I love to make it for a quick and delicious breakfast any day.
Foxtail millet is one of the oldest millet to have been recorded since the sangam period. The sangam period in Tamil literature refers to period between 300 BC to 300 AD. I think foxtail millet is the only millet to have featured so predominantly in Tamil literature.

Parrots keep trying to come to the fields for the millet again and again. Like that, you keep coming here. Please do not come after sunset as the forests are covered with big fierce elephants with giant tusks and I am afraid they might hurt you.
Wash the millet 2-3 times to get rid of the fine impurities. Soak the millet in water for 1Hour.

Ingredients
- Foxtail millet/Thinai - 1/2 cup
- Yellow moong dal/pasi parupu - 1/2 cup
- Green chilli- 4
- Pepper- 1tsp
- cumin - 1 tsp
- Mustard - 1 tsp
- Cashew nuts - handful
- Curry leaves - 1 string
- Hing- 1/2 tsp
- Ghee - 3 tsp
- Water - 3 cups
Instructions
- Soak Foxtail /Thinai for 1 HOUR. Set aside.
- Heat ghee in a pot.
- Add in Moong dal and saute well.
- Add in Washed soaked Foxtail millet and saute well.
- Add in chillies, Pepper, cumin and salt as per the taste. Mix well.
- Add in water and bring it to a boil. Cover and cook for 4 sounds.
- For tempering- In other an add ghee, once ghee is heated add mustard seeds let it crack, now add cashews, curry leaves and hing.
- Remove the cooker lid and smash the millets little and add the tempering mix well.
- Serve with coconut chutney and sambar.

Pour into cooked millet. mix well. |
