I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Here I have used carrot, peas and tomatoes. You can use any other of your choice, e.g. potatoes, green beans, cauliflower, broccoli, corn, capsicum, fresh tuvar and so on.

Ingredients
- Oats- 1/2 cup
- Yellow moong dal/pasi parupu - 1/2 cup
- Green chilli- 4
- Mustard - 1 tsp
- Chana dal - 1 tsp
- urda dal - 1tsp
- Cumin - 1 tsp
- Cashew nuts - handful
- Curry leaves - 1 string
- Hing- 1/2 tsp
- Turmeric- 1/2 tsp
- Onions - 1
- Tomato- 1
- Carrot -1
- Beans - 3
- Ghee - 3 tsp
- Water - 3 cups
Instructions
- Heat ghee in a pot.
- Add in Mustard, chana dal urdal dal,cumin, hing, curry leaves.
- Add in onions, toamato,carrot, beans and mix well.
- Add in chillies, turmeric and salt as per the taste. Mix well.
- Add in moong dal and oats mix well.
- Add in 3 cups of water and Cover and cook for 4 whistles.
- Let the pressure settle down and mix oats well.
- Serve with coconut chutney, curd and sambar.
