I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Since pongal season are around we can find sugarcane everywhere so make use of it.
We often cleanse our bodies in January:  setting health goals, making better choices in what we eat, and upping our activity level.
This year, along with my normal January bodily cleanse, I plan to cleanse my mindset and my schedule as well, getting rid of mentalities and activities that only bring clutter and stress. This may be a challenge, but I believe it will help me move into a healthier place in all aspects of life.
This Sugarcane Pineapple Water recipe is hardly a recipe at all. It takes just a couple minutes to mix and is SO refreshing. The touch of fruity flavor, acidity, and sweetness will keep you drinking ounces and ounces of water all month.
HEALTH BENEFITS OF SUGAR CANE:
  1. Prevents cancer: Sugarcane juice is alkaline in nature because of the high concentration of calcium, magnesium, potassium, iron, and manganese, which helps prevent diseases like cancer, that cannot survive in an alkaline environment. Thus it helps in fighting various types of cancer such as prostate and breast cancer.
  2. Aids in digestion: It is good for the well-being of the digestive system due to its high potassium levels. It helps in keeping the digestive system in good shape, prevents stomach infections and is considered to be particularly useful in treating the problem of constipation.

  5. Good for treating diabetes: Sugarcane is sweet in taste and is full of natural sweeteners, which have a low gylcemic index (GI), hence it works very well for diabetic patients.

Ingredients
  • Water - 1 glass
  • 2 Sticks sugar cane
  • 4-5 large chunks fresh pineapple
  • Ice (optional)
Instructions
  1. Combine all ingredients in a glass.Stir.
  2. The longer the water sits, the more the pineapple and sugar cane flavours will infused into it.
  3. Serve with ice if need.
