 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. I learnt this recipe from my mom, while cooking this kollu kurma my entire home will be filled with kollu aroma and i eat this with chapati, which make me to eat 2 more extra chapatis.

My mom says “kollu thindral uzhaikanum” (you should work if you eat horse gram),There is a saying in Tamil 'Elaichavanuku ellu; Kozhuththavanuku kollu'. Kollu aids in weight loss.

Ingredients
  • Soaked kollu/ horsegram - 1 cup
  • Onion - 1
  • Tomato - 1
  • Green chilli - 5
  • Grated coconut - 1/2 cup
  • Cinnamon - 1 inch
  • Clove - 4
  • Fennel seeds / sombu - 2 tsp
  • Mustard seeds - 1 tsp
  • Ginger- 1 inch
  • Garlic - 5 pods
  • Coriander leaves - 1 bunch 
  • Curry leaves - 1 string
  • Turmeric powder - 1/2 tsp
  • Pink salt - as per required
  • Water - 2 cups
  • Oil - 3 tsp
Instructions
  1. In a mixer jar add, cinnamon,clove,fennel, ginger, garlic, green chillies, grated coconut and grind well, along with this paste add 1 tomato and grind to a smooth paste.
  2. In cooker add 3 tsp of oil, add mustard, let it crack and now add 1 string of curry leaves.
  3. Now add onions and saute well.
  4. To this add grounded paste and saute will until the raw smell of paste goes.
  5. Add turmeric powder and required salt and mix well to this add soaked Kollu/horsegram and saute to the paste well.
  6. Add 3 cups of water and cover and cook for 3 whistles. 
  7. Serve hot either with chapati or ghee rice

Add all spices.

Add grated coconut.

Add ginger and garlic.

Now green chilli

Bunch of coriander leaves.

Grind the paste 1st and to this paste add tomato.

Grind all to a smooth paste.

Soaked kollu/ horse gram.

In a pan add oil, mustard and curry leaves.

Add chopped onions.

Now add the grounded paste.

Saute the paste well then add turmeric and salt.

Put soaked kollu/horsegram

Mix well and cook until raw smell goes.


Add water and cook for 3 whistle.

Serve hot.
