I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Kollu Rasam / Weight Loss Soup Recipe
This is a south indian style soup preparation where kollu is pressure cooked with enough water. The cooked kollu is separated from water and used to prepare sundal or salad. The water is used to prepare rasam. This water is also known as ulavu chaaru. The water is loaded with all the nutritional benefits from kollu. Not only kollu but whatever pulse or legume you cook in water, the same water can be used to prepare curry or soup. So never waste that water.
Kollu / Horse Gram is a nutritious bean rich in calcium, iron and protein. They are considered to be very helpful to people trying to reduce weight as it is rich in fiber. We prepare rasam / soup, sundal and chutney with kollu. Kollu tends to increase heat inside our body which in turn helps to burn fat. Pregnant ladies should avoid this.

Ingredients
- Over night Soaked kollu/ horsegram - 1 cup
- Tomato - 1
- Pepper - 2 tsp
- Cumin - 2 tsp
- Mustard seeds - 1 tsp
- Garlic - 5 pods
- Dried red chilli - 4
- Coriander leaves - 1 bunch
- Curry leaves - 1 string
- Turmeric powder - 1/2 tsp
- Tamarind juice - 1/4 cup
- Jaggery - 1/2 tsp
- Pink salt - as per required
- Water - 2 cups
- Oil - 1 tsp
Instructions
- In a cooker add over night soaked kollu/ horse gram and add water and cook for 5 whistle. Once the pressure comes down drain the water and keep aside. Make the cooked kollu/ horse gram to cool down.
- In a mixer jar add 2tsp of pepper, 2 tsp of cumin, garlic and 1 sppon of cooked kollu/horse gram and grind coarsely.
- In pan add 1 tsp of oil, add red chilli, mustard, let it crack and now add 1 string of curry leaves. cumin and pepper.
- Now add tomato and saute well.
- To this add grounded paste and saute until the raw smell of paste goes.
- Add tamarind juice, turmeric powder and required salt and mix well to this add remaining cooked Kollu/horsegram and bring it to boil little.
- Add the cooked kollu/horse gram water to this and add little jaggery boil will. Add coriander leaves.
- Serve hot either with ghee rice.
