I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. I tried this recipe for my daughter since she likes to eat mutton in soup type, and we are in winter season so wanted to be quite filling for her tummy too, so i added broken wheat(gothumai samba) to this kanji and it tasted yum.
To make a quicker lunch or dinner this is best. And people who are in diet can have this kanji.

Ingredients
- Mutton with bone - 1/2 kg
- Broken weight - 1 cup
- Sesame oil - 1 tsp
- Cinnamon stick - 1/2 inch
- Cloves - 3
- Fennel seeds - 1 tsp
- Bay leaf - 1
- Pepper -= 1 tsp
- Cumin seeds - 1 tsp
- Ginger-garlic paste 2 tsp
- Onion- 1
- Tomato - 1
- Green chilli - 2
- Garlic - 10
- Curry leaves- handful
- Pudina - handful
- Coriander - handful
- Chilli powder - 2 tsp
- Turmeric powder - 1/2 tsp
- Salt - As per taste
- Water - 2 cups
Instructions
- In a cooker add sesame oil 1 tsp, once heated add cinnamon,cloves,fennel seeds and bay leaf. let it infuse in the oil for 1 min.
- Then add 1 chopped onions sauté until brown, then green chillies add ginger-garlic paste 2 tsp and saute well until smell of ginger-garlic paste goes.
- Now add 1 chopped tomato and mix. Add pepper and cumin seeds crush them together and add into it, then add crushed garlic.
- Now add broken wheat and mix, then add washed mutton and mix well until the masala gets coated. Add pudina and corriander leaves and curry leaves.
- Now add chilli powder - 2 tsp, turmeric powder- 1/2 tsp, salt as per taste and mix well.
- Add required water to it and mix it well and cover and cook for 6 whistles.
- Once steam is out serve hot!!!
