Carrot Cupcakes

 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Rum Cake 

 A rum cake is a type of dessert cake which contains rum. In most of the Caribbean, rum cakes are a traditional holiday season dessert, descended from the holiday puddings. Traditionally, dried fruit is soaked in rum for months and then added to dough prepared with sugar which has been caramelized by boiling in water. The result, also known as "black cake", is similar to a fruitcake, with a lighter texture.

It is possible to become intoxicated from consumption of an excessive amount of rum cake, and some rum cakes contain even more than five percent of certain grain alcohols, though some are made to consistently contain less than 0.5% alcohol.


In Puerto Rico, rum cake is called Bizcocho de Ron, and is a sponge cake, so as to absorb the rum.

 Having a home that always smells amazing is one of my favorite parts of the Christmas season.

Ingredients:
  1. Flour - 1 and half cups
  2. Rum - 1/2 cup
  3. Egg - 1
  4. Butter(Room temperature) - 1/4 cup
  5. Butter Milk - 1/2 cup
  6. Oil - 1/4 cup
  7. Sugar- 1/2 cup
  8. Salt - 1 tsp
  9. Baking powder - 1 tsp
  10. Vanilla extract - 1 tsp
Instructions:
  • In a bowl add 1 cup of flour, sugar 1/2 cup, salt 1 tsp and baking powder 1 tsp and mix.
  • In other bowl add 1/4 cup butter and beat well, then add 1 egg , 1/2 cup buttermilk, 1/4 cup of oil, 1/2 cup of rum and final vanilla extra and mix well.
  • Add the flour mix half and mix in cut and fold method, then add remaining flour and mix slowly.
  • Now pour the cake batter into parchment lined baking tin.
  • Pre-heat oven for 10min, then bake it for 1hr in 180 degree.
  • Once cooled down remove the lined paper and serve warm.

bake in pre heated oven for 10min, with 180 degree for 1 hr 

after baking cool down the cake
