 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Linzer Cake (Linzer Torte) - oldest  Christmas cake 


 Linzer Torte is believed to be the oldest known cake in the world. According to Wikipedia, Linzer Torte is an Austrian cake with a lattice design on top of the pastry. The cake is named after the city of Linz in Austria.



Even though it is said to be the oldest cake in the world nobody really knows exactly when it was invented. The oldest recipe that has been found is from 1653. Linzer Torte is often eaten at Christmas in Austria, Hungaria, Switzerland, Germany, and as a Tirolean tradition.



The Linzer Torte is originally made with red currant jam. Unfortunately I wasn’t able to get red currant jam so I substituted for strawberry. 


YOU CAN BAKE ANY CAKES AND COOKIES ON STOVE ITSELF OR WITHOUT OVEN BY FOLLWING THE INSTRUCTIONS GIVEN BELOW WITH THE SAME TIMING GIVEN FOR EACH CAKE RECIPE 

Here baked this cake without adding salt or sand in normal heavy bottom pan with lid covered it.
Main thing you have to remember is that no heat should be gone out so cover with Tight lid or keep some weight on top of the lid. 


How to Bake a Plum Cake in Pressure Cooker :

  1. Take a heavy bottom pan or pressure cooker.
  2. Heat the pan or cooker. Place any stand/plate inside. 
  3. If your using cooker REMOVE Gasket and Whistle. Close only the lid of cooker.
  4. If your using just pan than use any lid cover, place heavy object on the lid, here i have use motor stone.
  5. Pre-Heat the cooker/pan for 15min in medium flame.
NOTE: MAKE SURE NO AIR IS BEEN ESCAPE WHILE BAKING.

Ingredients:
  1. Flour - 1 cups
  2. Hazel nut powder /almond powder - 1 cup
  3. Powdered sugar - 1 cup
  4. Butter(room temperature) - 1 cup
  5. Strawberry jam - 1 cup
  6. Chopped almonds - 1/2 cup
  7. Coffee powder - 1 tsp
  8. Cinnamon powder - 1/4 tsp
  9. Clove powder - 1/4 tsp
  10. Egg - 1
  11. Lemon - 1/2
Instructions:
  • In a bowl add 1 cup of flour, 1 cup of hazel nut powder or almond powder, 1 cup of powdered sugar, Coffee powder 1 tsp, cinnamon and clove powder - 1/4 powder, butter - 1 cup, egg 1 and half lemon juice.
  • Mix all well until they form a proper dough.
  • Place this dough in fridge for 15min.
  • After taking out from fridge, cut into 2 half, roll the dough and make little thick circle shape and cut according to your pan size.
  • Place the circle shape dough inside your greased pan.
  • Then with remaining dough cover the corners of pan. Then seal the corners well.
  • Apply strawberry jam on it.
  • Now with remaining dough make long strips and keep on top of the jam layer.
  • Now decor the corners with chopped almonds on the corner side.
  • Give the cake a good egg white wash.
  • Keep this cake in pre-heated oven for 200degree and bake for 4mins.
  • After baking cool down to room temperature and remove from the pan.
  • Now dust the cake with powder sugar and serve.
  • This will stay long for 4 days outside . NO need to keep in fridge.

Take all items

Add flour in bowl

rest the dough in fridge for 15min 

take the dough from fridge and cut into half

1 half of dough roll out thick 

make circle shape using pan



Grease the pan 

place the circle dough

apply strawberry jam 

with 2nd part of dough cover the edges 

then make long strips 

place the strips on the jam

keep chopped almond on the corners  

give egg white wash 

Keep it on pre heated oven for 200 degree and bake for 40mins

After baking cool down 

then remove from the pan 

dust with powdered sugar

Serve!!!
