 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Snowball Cookies are a buttery melt in your mouth cookie featuring ground cashews and sprinkled with powdered sugar. This is a delicious holiday classic cookie that you need to put on your baking list!

These cookies are the perfect snowball cookie. They bake to perfection and literally melt in your mouth… just the way a snowball cookie should!



One of my favorite parts of a snowball cookie is rolling them in the powdered sugar. This gives them a sweet and powdery finishing touch that reminds me of Christmas snow.

 My little four year old especially couldn’t get enough of these cute and delicious cookies. She would lick the powdered sugar and then eat the incredible cookie. 


Why Are They Called Snowball Cookies?

After the dough comes together you form them into perfect little snowball shapes. These bake for just a short 12 minutes before they are bathed in a generous amount of powdered sugar while still warm. The warmth of the cookies heats the sugar-coating them with a lovely layer of sweetness and it does not stop there. After completely cooling these little snowballs get the second dip in powdered sugar.

This is what makes the flavor of these cookies so over the top and of course what makes them look like little snowballs!

The cookies migrated to Mexico with European nuns where they were commonly served at Mexican weddings (hence the name, Mexican Wedding Cakes). From there it is not known how the snowball cookies recipe got the name, Pecan snowball cookies other than containing chopped pecans and looking a lot like snowballs with their powdered sugar.

Ingredients:
  1. Flour - 2 cups
  2. Cashews(chopped) - 2 cups
  3. Powdered sugar - 1 cup
  4. Sugar - 1/3 cup
  5. Butter(room temperature) - 1 cup
  6. Vanilla extract - 2 tsp
  7. Salt - 1/4 tsp
Instructions:
  • In a bowl add 1 cup of butter(room temperature), 1/3 cup of sugar, 1/4 tsp of salt and 2 tsp of vanilla extract and mix it all well until it becomes creamy texture.
  • Now add 2 cups of flour and cashews and gently mix it and form a soft dough.
  • Rest this dough in fridge for 30mins.
  • Now scoop the dough in ice-cream scooper and make a even equal size of balls and place it on baking tray.
  • Now pre-heat the oven for 180degree for 10 mins
  • Place the cookies inside the oven and bake it for 14-15 mins not more then 15 mins, since we need the cookies in white colour on top, check if it slightly brown.
  • Then cool the cookies for 5 mins and coat them in powdered sugar while they are still hot. And allow them to cool.
  • Once they are cool give all cookies final powdered sugar coating
  • Serve!! store them in air tight jars and this can be stored for 3 days in fridge.

Untill creamy

Now add flour

Add cashews  and mix 

Mix until they form soft dough and keep in fridge for 30 mins 

Take out from fringe and scoop the dough and form round shape

Place the cookies in pre-heated oven for 180 degree and bake for 14-15min 

After baking cool down the cookies for 5 mins and coat them in powdered sugar while they are hot 

Cool down the cookies completely 

again coat them in powdered sugar 

let it rest for 5mins and store in air tight jar and keep in fridge for 3 days and serve
