Carrot Cupcakes

Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Spiced Christmas Salt

Spiced Christmas Salt

Having a home that always smells amazing is one of my favorite parts of the Christmas season.

I’m a huge fan of gifts that can be consumed/ used up, especially if they are homemade. Both to give and to receive. It’s a great idea to have a few options on standby, so you are never short of ideas about what to give.

I made a batch of this gorgeous looking Christmas spiced salt from one of my favourite cookbooks: Nigella Christmas. The fact that you just need to stir things together, makes it perfect for the time poor last minute foodie gift giver ;). In Weck jars with pretty ribbons, it didn’t need any wrapping before being handed out to friends and family.
Or, if you are not time poor, it could be part of a gorgeous homemade hamper!
