I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Ingredients
- Fenugreek seeds/methi seeds – 1 teaspoon
- Black pepper corns – 1 teaspoon
- Fennel seeds – 1 teaspoon
- Coriander seeds – 2 teaspoon
- Cloves - 6
- Cumin seeds - 1 teaspoon
- Mint leaves – 1 string
- Lemon grass – 1 stick
- Tulasi – 4 string
- Ginger – 1
- Cinnamon stick – 1
- Honey - as per taste
- Water - 1 glass
Instructions
- Take a sauce pan with 1 glass of water.
- Add all spices with tulasi, lemon grass and min leaves too.
- Bring it to boil for 10 mins.
- Add honey when it is warm.
- Or drink hot without adding honey.
