 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Poongar Rice – The Women’s Rice


 Poongar rice also called as ‘Poongar arisi’ is one of traditional rice variety of  Tamilnadu, which uses natural farming methods (no use of any harmful chemical fertilizers and pesticides). It is flood tolerant and require less water. This variety is very similar to Mappilai samba. It is also called as ‘women’s rice’, as it cures most of women’s hormonal issues. It is especially beneficial to pregnant women’s and lactating mothers.

This rice is rich in anthocyanin( an antioxidant). Anthocyanin gives it colour (reddish brown) and flavour (nutty). Poongar rice also contain mineral like Iron, Zinc, Magnesium and Molebidinum. Its husk is also nutritious and tasty. This rice generally comes in boiled and semi-polished form.

Poongar rice is one of the most wonderful option for making soft idlis, dosas(especially Neer Dosa) and porridge.


HEALTH BENEFITS
:

A) Helpful for pregnant women: Its kanji(usually called Pez, water extracted out of boiled rice) is said to induce normal delivery in pregnant women.

B) Removes bad sweat from body: It contains anthocyanin(antioxidant)which helps to kick out the bad sweat out of the body and provide a healthy living.

C) Boost immune system: It increases haemoglobin content in blood and thus boost immunity system.

D) Contain vitamin B1: It contains vitamin B1 which is specially helpful in case of mouth and stomach ulcer and stomach related problem.

E) It is also helpful for headache and is said to boost memory.

F) Diabetes: It generally prevents the glucose from mixing in the blood stream thus preventing ‘diabetes insipidus’.

Though there are modern methods and variety with faster productivity but they cause many harmful effects on our body. Traditional methods are chemical free and harmless, also traditional variety of crops have higher content of nutrients thus even if they are produced in small scale they can be beneficial for consumers and can be harmless at greater scale. So organic farming can bring greater yield but there is need to select the best possible method.

If this rice is leftout, no issues you can add water into cooked rice and soak it over night and next day you can mix with curd and onions and chillie and serve.

Ingredients
  • Soaked overnightPoongar rice - 1 cup
  • Water - 3 cups
  • Salt - 1 tsp
Instructions
  1. Wash the rice well. Soak the poongar rice over night and next day use the same water for cooking the rice.
  2. In pressure cooker add soaked rice and pour 3 cups of water cook for 5 whistle, let the pressure come down.
  3. Serve hot.
  4. This matches well with fish gravy

wash and soak overnight

Add into cooker with soaked water

Cook for 5 whistle, strain the water and serve, do not discard the boiled water you can add salt and drink it.

Serve hot
