I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Ingredients
- Ice water/ Normal water - 1litre
- Pineapple, cut into thin slices
- 2 lemon , cut into thin slices
- Mint leaves - 5
Instructions
- Fill a large jug with the water.
- Thinly slice the pineapple and lemon. The more thinly you slice them the more surface area there is to release flavour into the water.Add the slices to the water, along with mint leaves.
- Let chill and steep in the refrigerator overnight.
- Enjoy.
