 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. I love Sweet potatoes! And always loved eating it as such. There are always certain things that you just eat as such and never can imagine it being incorporated in a dish right. Sweet Potatoes are such things for me.

I have used curry leaves in this paratha so that my daughter can eat that without discarding it, since she loves parathas. 

I always make parathas two ways, one stuffed way and the other blended with the flour. When you blend the stuffing mix to the flour you can end up making the parathas much quicker than the regular stuffed way.
We had these for our breakfast this morning with just Curds and Avakkai and can tell you that it was simply too good.

Sweet Potato Paratha | Sweet Potato Indian Flatbread

Delicious sweet potato paratha which taste amazing when served hot. This paratha is not only nutritious but is super healthy.

Ingredients
  • For Dough:
  • Sweet potatoes, boiled – 1 big
  • Wheat flour – 2 cups
  • Salt to taste
  • Water to knead the dough
  • Cooking Oil to cook the paratha
  • for grinding:
  • coconut grated - 2 spoons
  • cumin seeds - 1 tsp
  • green chilli -4
  • curry leaves - handful
  • salt to taste
Instructions
  1. Start by making dough, take flour, salt, and boiled mashed sweet potato in a bowl. Mix all well.
  2.  Now add all the ingredients given for grinding and mix well.
  3. Add in water slowly and knead to a soft smooth dough. Cover the dough with a bowl and set aside for 30 mins.
  4. Take small chapati dough  and roll it out.
  5. Cook till golden on both sides in ghee.
  6. Serve.

Pictorial:

  1.Add mashed pressure cooked sweet potatoes. 

 2. Add in wheat flour to the potatoes.

 3. Mix together.
4. Grind all the ingredients given.

5. Add this mixture to the flour.
6.Add salt. 

7. Mix all well.

8. Add required water to make a soft dough. add oil n cover n set for 5mins.

 9. Take a small portion n roll it.

 10. Roll out with pin.

11. Cook on the hot tava, add oil on both sides n flip it on.

12. Serve hot with ghee. I have packed this paratha for my kid lunch box with beetroot poriyal.
