I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Pineapple Pulissery is a famous Kerala dish which has a mild combination of flavors – sourness, sweetness, saltiness and spicyness. The sourness comes from the pineapple and yogurt, sweetness from the pineapple, spiciness from the green and red chillies. Ingredients:
- Pineapple-1 cup chopped
- Pineapple Puree – 1 cup
- Turmeric powder / Manjal Podi -1 tsp
- Curd- 3 tblspn well beaten
- Salt-to taste
- Sugar – 2 tsp
- chilli powder - 2 tsp
- For coconut paste:
- Fresh Coconut- 1/2 cup grated
- Green chilli- 2
- Cumin seeds / Jeerakam -1 ts
- For seasonings:
- Mustard seeds / Kaduku -1 tsp
- Urad dal / Ulundu Paruppu – 1 tsp
- Curry leaves-1 spring
- Dry Red Chilli – 2
- Vegetable oil -2 tblspn
- Hing - 1/2 tblspn
Method:
Grind together coconut,cumin,green chilli into a smooth paste by adding water.
In a kadai add pineapple, pineapple puree,turmeric powder,salt and sugar and chilli powder with some water and cook until the pineapple is cooked.
Now add in coconut paste and mix well..Bring this to a boil.
Remove this from heat and add in the well beaten curd and mix well.
Heat the ingredients for seasonings in oil and pour over the curry and mix well.
Serve this with hot steamed rice.
I have used chilli powder since my hubby loves this dish with spicy, so the colour of the curry has been changed to red if not it will be in yellow colour.

3. Add in 2 cups of water and bring to boil until pineapples are half cooked.
4. Add in all items for grinding.
5. grind to fine paste.

7. Add in turmeric powder.
8. Add in chilli powder.
9. Add in required salt.
10. Add in sugar.
11. Now mix well and bring to boil.
12. Cook until pineapple is cooked.
13. Now add well beaten curd and off the flame.
14. For seasoning add oil.
15. add mustard, urdal, curry leaves and dried chilli.
16. Pour into curry.
17. Mix well.
18. serve hot!!
