I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Ingredients:
- Water - 1¼ cup
- Ginger - 1 tsp grated or crushed
- Cinnamon - 1 piece
- Cardamom - 3 to 4
- Star anise - 1
- Cloves / Krambu - 2
- Tea Powder - ½ tsp
- Jaggery or brown sugar to taste
- Lemon Juice to taste
Instructions:
- Bring water to a boil. Add all ingredients except tea and jaggery.
- Simmer the spices in water for 3 mins.
- Add tea and boil for 2 more mins.
- Add in jaggery and mix well.
- Add lemon juice and strain.
- Serve hot.
