 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Ragi Roti - Karnataka Foods 

Ragi rotti is a breakfast food of the state of Karnataka, India. It is most popular in the rural areas of southern Karnataka. It is made of ragi flour. Ragi-Rotti means ragi-pancake in the native language, Kannada. It is prepared in the same way as akki rotti. 

The ragi flour is mixed with salt and water and kneaded well to come up with a soft dough. While making the dough; sliced onions and carrots, chopped coriander and cumin seeds can also be added for taste.

 Oil is spread over a griddle and a small amount of the dough is neatly spread over it to resemble a thin pancake. A small amount of oil is spread over it and the griddle is cooked over heat till the rotti turns crisp. Ragi rotti is served hot and is eaten along with chutney.

Ragi rotti is a breakfast food of the state of Karnataka.

Ingredients
  • Ragi Flour - 1 cup
  • Drumstick leaves - 1/2 cup
  • Onion finely chopped - 1
  • Green chilli - 4
  • Curry leaves - handfull
  • Mustard - 1 tsp
  • Cumin - 1/ 2 tsp
  • Urad dal - 1/2 tsp
  • Salt - as per taste
  • Water - 1 cup
  • Oil - as need 
Instructions
  1. In a bowl add 1 cup of ragi flour and keep aside.
  2. In a pan add 2 tsp of oil and add mustard, cumin, urad dal and aloow them to crack it. Add finely chopped onions, green chillies and curry leaves and sauté them. To this add cleaned and washed drumstick leaves and saute for few min.
  3. Add this saute mix to ragi flour, with salt as per taste and mix them.
  4. Add water gradually make a sticky dough.
  5. Add 1 tsp of oil on pan then take required dough and roll them ball, flat them on tawa, pour oil and cook it, Flip them cook again.
  6. Serve them with ghee on it and with chutney.

Take ragi flour and keep aside

Add oil in a pan then add mustard seeds,cumin seeds

then urad dal and let them crack 

add chopped onions, green chilli and curry leaves 

add washed cleaned drumstick leaves

saute them well, add required salt 

add them to ragi flour

mix them first 

then add water little by little until it forms sticky dough

mean while add oil in a pan and heat it 

take required ragi dough make a ball size

flat them on hot pan

tap them thin 

add oil to their corners 

flip over and cook again

serve hot with ghee on top with good coconut chutney!!!
