 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Godhi Halbai

Halbai is a traditional Karnataka-style sweet recipe that is mainly prepared during the festive seasons or other celebrations. The halbai is generally prepared with just rice as the main ingredient. However, in this recipe, I have tried with broken wheat to give it a nice uniqueness.


Though making this traditional sweet requires only a few ingredients, but its considered a quiet tedious process. If the ingredients are not as per proportion / right consistency is not achieved they turn sticky. I don’t feel they are very tough to make but the only boring thing is you need to constantly keep on stirring them .It calls for your undivided attention.


 As the mixture thickens, it gets harder to stir. But trust me the end result would be great . Don’t go by its appearance.. Halbai is not at all a colorful dish.. nor photogenic 🙂 … I’ve tried to add some color to the dish by making the background colorful.

Ingredients
  • Broken wheat - 1 cup
  • Coconut grated - 1 cup
  • Jaggery syrup - 1 cup
  • Cardamom - 2
  • Cloves - 2
  • Ghee - 4 spoons 
Instructions
  1. In a bowl add 1 cup of broken wheat, then add 2 cups of water and soak it for 1 hr.
  2. After 1 hr add this soaked wheat into mixer along with soaked water, add grated coconut, 2 cardamom and  2 cloves, then grind to smooth paste.
  3. Now in a pan(keep flame very low) add this paste and keep mixing it without any lumps . Keep mixing without removing your hands for minimum 5 min.
  4. Add jaggery syrup and mix again, then add pinch of salt to enhance the sweet taste to it.
  5. Keep mixing for 15 mins, dont move away since there are chances of getting burned, once the paste is been cooked , keep adding ghee in spoon by spoon as it will absorb more ghee, mean while keep mixing,.
  6. Stop mixing when the paste mixture turns into non-stitck lump. Here i have stopped when the mixture was little sticky.
  7. Grease the plate, then add this mixture and spread it, cut into desire shape while it is hot!!.

add the mixture into a pan with low flame

keep stirring

without any lumps 

keep mixing

now add jaggery syrup 

with pinch of salt 

then again mix

mix mix mix 

when it starts to thick 

add ghee 

keep on mixing until it leaves your pan 

then serve hot!!
