Carrot Cupcakes Everyone seems to love Carrot Cake, what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. There are many theories on the origin of this cake, some say it descended from the English's baked carrot puddings or European steamed carrot puddings. Nattu Kozhi Varuval is another chettinad delicacy. Though most of the chettinad dishes are known for its blend of fresh spices, this one is different. This dish uses absolutely no spice powders like garam masala, coriander powder. As a result, the natural flavours of the meat is highlighted. This dish has very few ingredients which are the key to the final taste of the dish.
This dish can be tried by all beginner's and bachelor's.
I tried this recipe in mud pot for a change and to cook faster for my late lunch.

Ingredients
- Chicken with bone - 1/2 kg
- Onion chopped - 1
- Tomato chopped - 1
- Crushed ginger and garlic - 2 tsp
- Coriander chopped
- Red chilli - 5
- Fennel seeds - 1 tsp
- Chilli powder - 2 tsp
- Turmeric powder - 1/2 tsp
- Oil - 2 tsp
- Water - 1 cup
- Salt as per taste
Instructions
- In a mud pot add 2 tsp of oil, red chiili 5, fennel seeds 1 tsp and sauté for few seconds.
- Add chopped onions , fry until it turns brown, add crushed ginger and garlic paste and saute it until raw smell leaves.
- Now add chopped tomato and cook until it becomes mushy.
- Add washed chicken pieces and mix it well.
- Add 2 tsp of chilli powder, turmeric powder and required salt, mix well
- Add 1 cup of water and cover and cook until chicken is cooked well. And make it into semi gravy or dry roast.
- Garnish it with chopped coriander leaves.
- Enjoy with hot rice.
