I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Microgreens are  healthier than fully grown plants.

Ingredients:
  1. Moong dal microgreen leaves-  handful
  2. Burger buns -2 
  3. Eggs - 2 
  4. Cabbage - finely chopped 
  5. Onion finely chopped -1 
  6. Green chilli - 3
  7. Butter - 1 tsp
  8. Pepper powder - 1 tsp
  9. Salt as per taste 
Instructions:

  1. Cut the Moong dal microgreen leaves from the plant and wash it well and chop it. Then chop the required cabbage, onion and green chilli.
  2. In a bowl and 2 eggs and add all chopped items with little pepper and salt as per taste. Now mix all well, pour it into hot pan and fry, flip over and cook for few min and remove from the pan.
  3. Cut the burger buns into half, apply butter on it and toast it on pan lightly.
  4. Place the omlet on the burger and cover it with other and serve hot.
  5. Enjoy.

Take all items

Cut the moong dal micro leaves from the plant and wash well

Add eggs in a bowl

Include chopped onions, cabbage and green chilli

Add Microgreen leaves

Add salt

Add pepper

Mix it well

Cut the buns into half, apply butter on it and toast it on pan 



Pour the egg mixture into hot pan and cook 

flip and cook for few mins



Take one side of bun

Keep the omlet on it 

Cover with other bun 

Serve hot
