I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. These apple pie cookie are everything you love about a classic apple pie baked in a fun, mini version. A simple pie dough with a warm, bubbly filling of apples and cinnamon sugar makes for the best dessert. After baking to a flaky, golden-brown crust, each cookie is topped with a drizzle of caramel.

These mini-apple pies are a sure hit and a perfect use for apples in the fall. They look great on a cookie plate and taste great! If any apple mixture remains, it can be served warm over vanilla ice cream!

Ingredients:
  1. Wheat flour/ maida - 2 1/2cup
  2. Apples - 2
  3. Sugar - 1/4 cup
  4. Brown sugar - 4 tsp
  5. Cinnamon powder - 1 tsp
  6. Milk - 1/2 cup
  7. Salt - 1/2 tsp
  8. Vanilla extract -1/2 tbsp
  9. Butter - 2 tsp
  10. Water - 1/4 cup
Instructions:

  1. In a bowl add 2 1/2 cup of maida, 1/4 cup of sugar, 1/2 tsp of salt, 1 tsp of cinnamon powder, add water little by little until it forms a dough. Now keep this dough in the freezer for 10 min.
  2. APPLE FILLING : In other bowl add chopped apples with 2 tsp of sugar, 1 tsp of cinnamon powder and mix it. Soak this for 10 mins. After soaking, take a pan add 2 tsp of butter once butter got melted add soaked apples, sauté well and cover and cook until apples are cooked and caramelized.
  3. FOR SALTED CARAMEL: Now in a sauce pan add 1/2 cup of milk, brown sugar 2 tsp, salt 1/2 tsp and mix well and cook it in high flame until it becomes thick caramel. Off the flame and add vanilla extract and mix.
  4. Now take the dough roll out thin and cut in round shape using cookie cutter, with remaining dough cut into  long strips, keep aside.
  5. Take one round shape dough, spread salted caramel on it then add 1 tsp apple filling, now place long strips on it and cover it.
  6. Apply oil on the baking tray and keep all cookies on it and bake it for 30 min in 180 degree. Once done remove from the the tray and cool down the cookies. 
  7. Serve and you can keep it in air tight container for min 2days.  
Note: Always use minimum apple filling on the pie dont add more stuffing.

Add 1/4 cup and mix 

Form a dough and keep it in freezer for 10 min
 FOR APPLE FILLING
Add chopped apples in a bowl

1 tsp of sugar

1 tsp of cinnamon powder

Mix everything well and soak it for 10 min

Add Butter in a pan

Once butter gets melted add soaked apples into it

sauté it

Cook the apples until it gets caramelized 
 FOR SALTED CARAMEL 
Milk 1/4 cup

1 tsp of brown sugar 

1/2 tsp of salt

Mix

Keep it on high flame and cook

Keep cooking until it gets caramel 

Off the flame and add vanilla extra 

Final mix 

Take dough from freezer and roll 

Roll out thin 

And cut into round shape using cookie cutter 

With remaining dough cut into long strips 

Take one dough 


Apply caramel sauce 

Place little apple filling

Do it for all the doughs 

Apply oil on baking tray 

Keep all the cookies 

Bake for 30 min in 180 degree

Cool down the cookies and serve !!!
