 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Seepu Seedai | Krishna Jayanthi Recipe



Seepu Seedai is a Chettinad Special murukku also called as Seepu Murukku. The ingredient that makes this different is the coconut milk is added.


This deep fried snack is also made on a special acchu or press, however you can make this with a comb as the snack name says. Seepu means Comb in tamil and when the mold is not handy, a comb is used. It goes without saying that a new comb is used!
The taste was very good and even the barely there meeting shape, the snack got over.
I have coated this seedai with powdered sugar, for krishna jayananthi. 

I really like the coconut milk flavor in it. Making seepu seedai at home is time consuming and you need little patience to make it. Kids will surely enjoy this snack by wearing them on their fingers before they munch it.

Ingredients
  • Rice flour - 1 cup
  • Roasted urad dhal flour - 1/4 cup
  • Besan gram flour - 1/4 cup
  • Coconut milk(warm) - 1 glass
  •  Sugar powder - 3 tsp
  • Butter - 3 tsp
  • Salt - 1 tsp
  • Oil to fry
Instructions
  1. In a pan, dry roast the urad dhal.
  2. Grind this to a fine flour.
  3. Sift this flour using a strainer and measure 1/4 cup of this flour.
  4. Now in a bowl add rice flour, with roasted urad dhal powdered and besan gram powder, and 3 tsp of butter, with 1 tsp of salt. Mix all well.
  5. Add warm coconut milk to the flour and mix well, bring it to soft dough.
  6. Apply oil in Muruku press or Idiyappam press and take little dough roll it in cylindrical shape and put inside the press, and press it into long ribbons.
  7. Cut this into small shapes and roll it into your finger and press the ends.
  8.  Keep oil in a pan and drop this into medium heat oil and fry until brown. Drain this and add 3 tsp of sugar powder into it and toss it well until it is hot.
  9.  Once all seedai are cool down store in a air tight jars.
  10. Serve this during evening snack for kids.
NOTE: dont add too much urad dhal powder, it will make seedai too hard to bite after frying.

Take all ingredients 

Add rice flour 

Add roasted urad dhal powder

Besan flour 

Add required salt

Add butter 

And mix all well 

Now pour warm coconut milk 

Mix to form a dough

Make a soft dough

Now take muruku press with rectangle shape blade 

Apply oil on the blade 

Make the dough into cylindrical shape 

Put inside the press

Roll the top

Make a long ribbon pattern

Cut into small shapes 

Like this 

Now take 1 small shape 

Now roll it into your fingers 

Press the ends 

Make all like this 

Drop this into hot oil and fry until brown 

Drain from oil 

Add powdered sugar while it is hot 


Toss well and store in airtight jar 


Serve as evening snack for kids
