 Carrot   Cupcakes Everyone seems to love Carrot Cake,  what I also like about them is how wonderfully moist they are and how flavorful they taste. I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. You can also add 1/2 cup (120 ml) of currants or raisins to the batter. Carrot Cakes became popular with the health food craze of the 1970s. Budget Lunch Plain Kuska-  recipe - cook more with less during lockdown

With food products being stripped from many supermarket shelves in fear of a full coronavirus lockdown, more households than usual are cooking with dried and tinned foods. 


Despite the Government and different members of the public urging people to stop panic buying, shoppers are still having to contend with bare supermarket shelves.

This biriyani is made without any vegetables, so no chopping or grinding much and yet it tastes flavorful. One can find slightly different version of these by adding little biriyani powder.
This recipe was cooked without GAS OR MIXER, we have used charcoal so this recipe can be used while when you plan for trekking without taking much vegetables which will be Hussle free.

I have used charcoal which we used to grill chicken, just light up the charcoal and this will last for minimum 2 hours. And I have use clay pot so be carefull while cooking rice since there are chances of getting burned so keep stirring the rice once u have added. 
This Plain biriyani goes well with simple raitha or cucumber or egg curry.

Ingredients
  • Jeera samba Rice - 1 cup
  • Ghee - 4 tblsp
  • Fennel Seeds / Sombu / Saunf - 1 tsp
  • Cinnamon / Pattai - 1 stick
  • Cardamom / Yelakai - 1
  • Cloves / Krambu -3
  • Bay leave -1
  • Garlic- 6 pods
  • Ginger - 1 inch
  • Onion - 2 medium size chopped finely
  • Tomatos - 2 medium size chopped finely
  • Green Chillies - 4
  • Corriander leaves - 1 bunch
  • Mint leaves - 1 bunch
  • Curd - 1 cup
  • Turmeric powder - 1/ 2 tsp
  • Chilli power - 1/2 tsp
  • Biriyani masala - 2 tsp
  • Salt to taste
  • Water - 2 cups
Instructions
  1. Soak rice for 30 mins. Set aside.
  2. Heat ghee in a pot. Add in whole spices and let them sizzle.
  3. Add in onions and cook till golden.
  4. Add in chillies and mix well.
  5. Add in tomatoes and saute will.
  6. Now in motor pestle add corriander leaves, mint leaves, ginger and garlic, green chillies and grind well to make a paste without adding water.
  7. Now add this paste to the mixture and mix well.
  8. Now add curd mix well
  9. Add in salt as per the taste, turmeric powder, chilli powder and biriyani masala powder and saute well.
  10. Now add in soaked rice and mix well.
  11. Add in water with little mint leaves on it and bring it to a boil. Cover and cook for 15min.
  12. Fluff up the rice and serve.

Pictorial:
First light up the charcoal and keep on the charcoal and start cooking, charcoal will last for minimum 2 hours. SO no panic .
In a pot add 4 tsp of ghee


Add whole spices

let them sizzle 

Add onions 

sauté onions well

Add in slit green chillies 

Now tomatoes 

In motor pestle add in coriander leaves, mint leaves

Add garlic

Add ginger

Add green chillies and make a corse paste

Add this paste 

saute well until good aroma comes out 

Add 1 cup of curd 

with salt as per taste 

turmeric powder

chilli powder

Add in biriyani MASALA POWDER and mix all well

Add soaked rice and mix gently 

Add required water and mix well

finally add mint leaves on it 

cover and cook until rice is cooked 

pot cooked rice will remain hot for few hours

Serve hot with simple cucumber raitha
