I love this Carrot Cupcake recipe because it's so easy to make. No mixer is required. The time consuming part is the grating of the fresh carrots. I have included applesauce in the cupcake batter which, along with the oil, makes these cupcakes so moist. But, if you like, you could use an equal amount of grated apple or even crushed pineapple. Ingredients:
  1. Coconut milk (thin/thick) - 1 cup
  2. Carrots - 2
  3. Choco powder - 1 tsp
  4. Brown sugar - 1 tsp
  5. Vanilla extract - 1stp
  6. Chia seeds - garnishing
METHOD :
  1. In a blender add 1 cup of thin/thick coconut milk, with chopped carrots, choco powder, brown sugar and vanilla extract.
  2. Give a good mix and strain the juice.
  3. Serve cool with chia seeds.
